About Us
We’re Matt and Ally. Carving Table started from a simple place: we fell in love with the food cultures of Spain and Italy, and we wanted to share a little of what inspired us.
Matt lived in Madrid for six months with a local family who taught him how jamón is actually meant to be cut and enjoyed - not just as a product, but as a cultural ritual. He spent way too much time in neighborhood markets staring at hanging legs of jamón, asking questions, and taking photos in every butcher shop he came across.
Years later, on our honeymoon in Italy, that curiosity continued. We’d wander into tiny salumerias, try whatever the shop owner put in front of us, and soak up the way food is treated with patience, respect, and history. Matt kept the same habit overseas - stopping to photograph every prosciutto and cured meat he saw.
Those trips shaped how we think about food: simple, intentional, rooted in tradition.
Carving Table is our way of bringing a small piece of that experience home. What we offer isn’t meant to be fancy - just honest, well-prepared charcuterie that reflects the places that inspired us and the techniques Matt learned firsthand.
No gimmicks. No over the top story. Just two people who love this experience and want to share it with others.
